Food as art and always focusing on the pleasure of eating.

Carl Jan Granqvist är tillsammans med Gastronomiska Akademien, Måltidsakademien och Kungliga Skogs- och Lantbruksakademien initiativtagare till Stockholm – European Capital of Gastronomy.
Som krögare, vinkännare och professor i måltidskonst har han stora ambitioner med det gastronomiska huvudstadsåret:

“We will showcase Swedish food and food culture made with sustainable ingredients and innovative cooking techniques, and highlight the diversity of gastronomic experiences that the country of Sweden has to offer. We will showcase gastronomy as an art form with the pleasure of eating in focus.”

Tillsammans med Karsten Thurfjell och Hans Wallensteen är Carl Jan Granqvist författare till boken Svensk gastronomi: en global succé. I april 2022 donerade han sitt livsverk Saxå Bruk till den nybildade stiftelsen Aptitum Akademi vars syfte är att sprida kunskap till yrkesverksamma inom besöksnäringen, forskarsamhället och allmänheten om nordisk och svensk gastronomi.
