Swedish Regional Menus
Stockholm will showcase Sweden’s regional food culture.
Sweden’s 21 counties have, with the support of their governors, created 25 new regional meals and a new capital meal. The meals include parings with regional beverages, regionally designed utensils as well as poetry and music to enhance the experience of the regional culture. The meals will be presented in Stockholm in 2023.
The project is an initiative by the Swedish Academy of Gastronomy , The Academy of Culinary Arts & Meal Science and The Royal Academy of Forestry and Agriculture in collaboration with Folkets Hus & Parker.
The task presented to the governors was to create new regional meals – not a single course.
As a result new modern three course menus showcasing regional produce rooted in deep traditions have been created throughout Sweden. The aim was to focus on the different regions terroir with its own unique produce and food culture offering culinary tourists and Swedes alike a new take on regional food.
